Loaded with Mexican Flavors, made entirely from scratch, this is meat free food for carnivores at its finest. This lasagna is like an enchilada layered up like lasagna, using fresh from the oven Wrapster Tortillas, instead of lasagna sheets. Inspired from Chef Nagi at Recipetineats.

Ingredients

Wrapster Flour Tortillas Big 6 Pcs
Olive Oil 1 tbsp
Garlic Clove Minced 1
Red Onion Finely Chopped Half
Red Capsicum Chopped 1 1/2 Cup
Zucchinis Chopped 1 1/2 Cup
Black Beans Canned 425gms
Frozen Corn 1 1/2 Cup
Low Fat Cheddar Cheese 2 1/2 Cup
Fresh Coriander Leaves for garnish
Sauce: Crushed Canned Tomatoes 800gms, Olive Oil 1 tbsp, Garlic Clove 1 Whole peeled, Red Onion Chopped 1/2, Fresh Coriander 1 Cup, Cumin 1 tbsp, Oregano 1 tbsp, Paprika 1 tbsp, Salt 1 tsp, Garlic Powder 1 tsp, Red Chilli Powder 1/2 tsp, Sugar 1 tsp, Coriander Powder 2 tsp, Black Pepper 1/2 tsp

Steps

1. Preheat oven to 180 C
2. Place sauce ingredients in a blender and blend until onion is completely blended and no longer visible.
3. Heat oil in a large nonstick skillet. Add garlic and onion , cook for 1 min. Add capsicum and cook for 1 min. Add Zucchini and cook for 3 min until charred. Remove skillet from heat.
4. Smear a bit of sauce on a 12x10 inches dish, place 1 Wrapster flour tortilla in the middle, tear another tortilla in half and place on either side to cover the entire dish.
5. Top with half the sauted filling. Scatter over half the black beans and corns. Drizzle over 1 cup sauce and 3/4 cup grated cheese.
6. Repeat with another layer so you have two layers of filling. Then for the last layer, top with Wrapster tortillas and cover two cup of sauce and scatter over remaining cheese.
7. Bake for 25 min until cheese is bubbling and golden. Rest for 5 min. Garnish with fresh coriander and serve!
